Our executive chef Colin Barker makes a dawn visit to our suppliers at Sydney Fish Market (just minutes away from us on Blackwattle Bay), chilled boxes of the best fish, oysters and crustaceans arrive from our suppliers all over Australia, and other suppliers arrive at the door with something special to surprise us. The freshness, quality and beauty of the produce we deal with daily never ceases to thrill our team in the kitchen...and our customers!
